This Spicy Shrimp with Peach Salad is the perfect balance of heat and sweet — chili-marinated shrimp grilled to perfection, paired with juicy peaches and a zippy dressing.

Ingredients:

For the Spicy Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste

For the Peach Salad:

  • 3 ripe peaches, thinly sliced
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 1/4 red onion, thinly sliced
  • 1/2 avocado, sliced (optional)
  • 1/4 cup feta or goat cheese, crumbled
  • Fresh mint or basil leaves (for garnish)

For the Honey-Lime Dressing:

  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Directions:

1.Marinate the Shrimp
  • In a bowl, mix shrimp with olive oil, lime juice, smoked paprika, chili flakes, garlic powder, cayenne, salt, and pepper. Let it sit for 10–15 minutes while you prep the salad.
2.Grill or Sear the Shrimp
  • Heat a skillet or grill pan over medium-high heat. Cook the shrimp for 2–3 minutes per side until pink and slightly charred. Remove and set aside.
3.Assemble the Salad:
  • In a large bowl or serving platter, combine the greens, sliced peaches, red onion, avocado (if using), and crumbled cheese.
4.Make the Dressing:
  • Whisk together olive oil, honey, lime juice, Dijon mustard, salt, and pepper. Taste and adjust seasoning.
5.Combine & Serve:
  • Drizzle dressing over the salad and gently toss. Top with spicy shrimp and garnish with fresh herbs. Serve immediately.

Notes:

  • Grilled peaches are a great option if you want extra caramelization and smokiness.
  • This salad pairs beautifully with toasted sourdough or a glass of chilled rosé.
  • Make it dairy-free by skipping the cheese or using a plant-based alternative.

This Spicy Shrimp with Peach Salad is where summer flavors truly shine. The spicy shrimp packs a smoky punch, the peaches bring juicy sweetness, and the herby, zesty salad ties everything together in one refreshingly bold bite.
