Ingredients:

  • 12 large shrimp, peeled, deveined, and cooked
  • 1 cup shredded lettuce
  • 1 cup julienned carrots
  • 1 cup julienned cucumber
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 12 rice paper wrappers
  • Optional: Vermicelli noodles (cooked and cooled)
  • For the Dipping Sauce:
    • 1/4 cup hoisin sauce
    • 2 tablespoons peanut butter
    • 1 tablespoon soy sauce
    • 1 tablespoon water
    • 1 teaspoon sriracha (optional)

Directions:

1. Prepare Ingredients: Slice the cooked shrimp in half lengthwise. Prepare the lettuce, carrots, cucumber, mint, and cilantro. If using, prepare the vermicelli noodles according to package instructions.

2. Soak Rice Paper: Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds until it softens. Lay it flat on a clean surface.

3. Assemble Rolls: Place 2 shrimp halves in the center of the wrapper. Add a small amount of lettuce, carrots, cucumber, mint, cilantro, and vermicelli noodles (if using).

4. Roll: Fold the sides of the rice paper over the filling, then roll tightly from the bottom up, keeping the ingredients tucked in. Repeat with the remaining wrappers and fillings.

5. Prepare Dipping Sauce: In a small bowl, mix hoisin sauce, peanut butter, soy sauce, water, and sriracha until smooth.
